Maybe look at the Fuji XE-3 with a pancake 18mm lens. Or the X-T3 with a compact zoom. I don't know if either would be small enough to fit into the Chuckbucket, but Rohner carries an X-T2 and so does another cyclist I know.
Panasonic makes the GX-9 and the LX100II. Both are good cameras. The GX-9 is micro-4/3rds though, so while you can attach pancake lenses to keep them small, their best lenses are not so compact though they are great lenses. The LX100II is a fixed lens short zoom. My sister-in-law has one and swears by it. She's pretty picky about image quality, so it must be pretty good.
But Bobonli is right. Not much out there with the size, sensor and optical quality of the RX100 series. The Fuji RX100F is a different camera in a lot of ways, but strangely it does seem like the closest competitor.
