    Default Ezra's lamb shanks

    Seeing Summilux's lamb recipe prompted me to remember this. It's a short video by Ezra Caldwell that's everything you need to know to braise lamb shanks. So easy, so good, and the technique works with chicken & pork also.

    RIP Ezra—a true renaissance man. I raise a glass in your honor and will be picking up some lamb shanks this weekend!

    That's beautiful.
    The Swiss Chard accompaniment is inspired too. Lamb is pretty fatty and your palate can get gummed up without a counterpoint. Red wine to accompany is good too. My personal choice would be something from the Rhone.
