Skratch Lab Like Bars/Cookie Mix
So I tried to reproduce the Skratch Lab bars into a recipe I could create at home. Not rocket science but thought others might find it useful. Otherwise follow the Skratch instructions. I do like to add about a tablespoon of vegetable oil if I'm using dried fruit/nuts for the filling/flavor or I've found that substituting 1/3 of the butter with natural peanut butter works well (assuming it's not dry/chunky).
Whole Wheat Pastry Flour 175g
Brown Sugar 100g
Sugar 50g
Oats 50g
Sea Salt 5g
Baking Powder 3g
Vanilla 3g
Baking Soda 3g
Cinnamon 3g

This is helpful. I like their mix but have been wondering how to reverse engineer it rather than fork over the $$$.
What type of oats?
Is the nutritional profile about the same as their mix?

I use regular oats, there's not a ton so they aren't super noticeable while eating. I guess you could do quick oats or similar if you want something finer. I'm not a nutritionalist but based on the ingredient ratios, it should have a very similar profile. I think my version may have a tad less sugar than theirs so that may affect it a bit.

Less sugar is fine by me. I usually add choc chips and fresh berries. The berries bring a bit of moisture.
