Its been a decade, but the Botel was fun.
Botel - The Floating hotel in Amsterdam
No reco on a hotel, but this is a cool spot to grab some grub. Spanish tapas, mostly. We went to the Utrectsestraat location. It gets crowded, so if you are there in cool weather, take a jacket as there is outdoor seating. It is one of the few places in town where the staff does not speak english, so be prepared with rudimentary spanish or dutch.
Pata Negra
This is a pretty cool hotel, right around the corner from Leidseplein: Dikker & Thijs Fenice Hotel
It 's not cheap, but that wasn't asked for.
Two years ago, me and my wife were going to Amsterdam for a few days, but a cancelled flight ruined our trip. We booked a room at the Acostar Hotel, recommended by some friends. Another friend of mine has just spend two days there, I'll ask him.

tks... lemme know.
my baby travels a ton.
filled up 2 passports already..(28).
I've stayed in a few hostels in the city, can't remember their names, but never a hotel. Compared to other hostels in Europe, they were excellent and the price was always reasonable for a single room.
I stayed on a houseboat somewhat near that boatel thing once. Get him on the water. It is fun.
Westcord City Center: great, but the room is a bit small with a strange furniture distribution.
