    Default Breakfast Throwdown

    Bring it - gimme your best breakfast concoctions. Easily my favorite meal to cook, and usually consume. Everything, anything.

    This morning? The House of Aerobic Hardship's vaunted MANCAKES. Basically a bastardized pancake laden with protein. They're super thick, super puffy, super huge, and quite filling if you use whole wheat or buckwheat topped with peanut butter.

    1.5c flour (prefer whole wheat)
    2-4T brown sugar
    2t baking powder
    1t baking soda
    Pinch of salt
    1t nutmeg
    60g of your favorite whey protein powder (victim of choice is usually the PowerBar vanilla, nice 20g protein kick in 30g)

    1-2c milk depending on desired consistency. Use whole milk or go home.
    1-1.5c egg whites or egg beaters, 2-3 large eggs if you're feeling skinny.

    Toss in berries/chocolate chips/whatever (I've done Starburst) for whatever suits your fancy. I prefer to make two massive 400-600cal pan-sized cakes, and save one for lunch. Usually top with maple syrup, PB, Nutella, whipped cream cheese, cottage cheese, chocolate syrup, or jelly.

    Fry some roasted red peppers, then
    Fry some pork roll, then
    Fry some eggs in the same pan
    Put it all on a bagel
    Shaved parm on top
    Salt and pepper to taste

    This thread reminds me I need to break out the waffle iron again soon.

    Yo Nate, I think I can smell tomorrow's breakfast. Thanks for that.

    Here's my usual quick and dirty as of late:

    8" frying pan on low to medium heat
    While pan is heating, toss in 2-3 slices of dry salami to render fat
    Slice some whole pickled sweet pepper in to the pan if I'm feeling so inclined
    Crack two fresh eggs into the pan - I prefer farm-bought from a woman named Wilma in Mooretown, VT or the Thorpes in New Hope, PA (oh the egg pretention)
    Slice some slivers of cheese on top from whatever block I can find in the fridge
    When the eggs are 3/4 or so cooked, throw a tortilla on top of the whole mess (I prefer TJ's Handmade), warming the tortilla and creating a convection effect to help cook whats underneath

    When the tortilla warms to the point it's translucent, flip the whole thing on to a plate, and top with copious amounts of hot sauce (I prefer Tennessee Sunshine - thanks Ben), cracked Tellicherry peppercorn, and maybe some raspberry preserve or homemade raspberry-chipotle wing sauce from a recipe I picked up from Steve Hampsten. Fold it up and down the whole thing, then go for a ride.

    Total time - 5-10 minutes, figure 600'ish calories.

    Are there decent bagels in Chicago? You know what I'm up against here in DC.

    omelet(ish)

    4-eggs
    Splash- skim milk
    beat wisk

    simmer:
    handful of ham or pancetta

    pour in eggs over ham

    handful- sliced/diced 'shrooms
    handful- mixed greens
    dusting of shredded cheese

    fold

    2 toaster multigrain waffles topped with local honey and strawberries/banana

    every weekend

    i will even make up extra to travel with to races and replace waffles with brown rice

    My lady is from TEX-ASS and loves her breakfast tacos.

    I like them the best with re-fried black beans, potatoes with green peppers and scrambled eggs.

    They have to be made with par-baked tortillas or they aren't quite right.

    In a frying pan with some olive oil..

    Onions, peppers, whatever veggies are around
    a handful of cooked wild rice I keep in the freezer. Maybe some cooked lentils or homemade beans.
    A few forkfuls of pulled pork
    Some cashews or pepitas
    Sprinkle with chipotle powder. Toss in cilantro whatever herbs are available. Squeeze a lime wedge over it. Toss till crisp tender.
    Dump onto warm corn tortillas and top with an easy-over egg or two.
    Add sliced fresh jalapeńo or Salasa or pico de gallo.

    Consume. Ride for 3 hours.

    Uh huh. Slow-cooker oatmeal. 30 seconds to 1 minute of prep the night before. Stir in some maple syrup and whatever fruit is laying around come morning.

    Balsamic-reduced Potato Hash with Italian Sausage:

    Ingredients:
    -1 to 2lbs potatoes, I prefer fingerling or standard red. Cubed into 1cmish chunks.
    -1/2c to 1c balsamic vinegar
    -2T butter or other fat (I prefer duck fat)
    -1/2c diced green peppers
    -1/2c diced red onion
    -1/2c sweet corn (Canned, easy)
    -1/2lb Italian sausage, mildly spicy
    -1/2c Gorgonzola cheese
    -Salt and pepper to taste

    Melt butter in large skillet over medium-high heat. Add potatoes, coat and saute for a minute or two. Add balsamic vinegar, reduce until it's about half the volume and potatoes are cooked through. While vinegar is reducing, brown the sausage in another skillet with onion, green peppers and corn. Mash potatoes a little bit with your stirring implement to release some starches, but not enough to turn them into a masticated pile. Dump the sausage/veg mix in with the potatoes and reduced balsamic. Remove from heat, add in gorgonzola, stir. Salt and pepper to taste, cayenne could be a good addition if you need a little more kick.

    Goes great with scrambled eggs, or if you really wanna get adventurous, put an over-easy fried egg on top and bust the yolk in. Noms.

    Onions, garlic, avocado, canteloupe, corn, and teff cereal with a little bit of hot sauce, liquid smoke, goat cheese, 1/2 sprig rosemary and a pinch of salt...nestled in a dry roasted grape juice soaked peach... with maple syrup drizzed over it.
    Eat about 4 or so of them.
    Cottage cheese for dinner, Greek yogurt for dessert, eat that everyday an' it will make your butt hurt.

    Bobbie Flay did a "Throwdown" with Belgian waffles a few seasons back on the food channel i'll see if i can find the classic recipe

    First time ever crepes!


    Filled with homemade whipped cream and bananas. Nom.

    Also: Sour cream pancakes (pictured) and a rather epic eggy scramble.

    Pancakes and crepes self-explanatory, any recipe on the internets will do, but the eggs:

    -Diced scallions
    -2 or 3 slices of thick-sliced peppered bacon
    -2 to 4 eggs and 1/2c to 1 c egg whites, depending on quantity desired
    -2T to 4T cream
    -1/2t garlic powder
    -1/2t cumin
    -Salt to taste

    Dice bacon and fry in large skillet, add scallions as bacon begins to turn crispy. Remove junk from pan and drain most of the grease out, keeping it on medium heat. Whisk eggs, whites, cream, and seasonings in bowl until frothy. Add to skillet. Toss bacon and scallions in. Let eggs cook for 20-40 seconds before scraping around pan. Cook until you think they're almost done (still wet), and remove from heat. Serve immediately.

    The cream and cooking technique makes the scramble.
