nothing makes sense when the WW label comes to play atwo, except for wall-hangers and coffee shop bikes.
Try this for sensibility: A zero-pound/gram/stone bike (or any component part) won't win a race*, but noodled/fractured/snapped components have lost very many and sometimes caused injuries.
*The resultant change in power to weight ratio is too insignificant to matter over the duration of most sporting events. (but let us not derail this thread)
There's a lot of great stem/bar handmade stuff. Getsome!

Perhaps I shouldn't have mentioned 'weight weenie'! There are degrees of this malady, for sure, but I perhaps should have kept simply to race bike or weight conscious built, with the tacit expectation that the component is robust enough for its intended use.

If ya wanna get all weight weenie like, you need to go ti.
Here's the comparison of a full bar/stem combo and a Thomson stem and bar center section only...it's like getting the grip sections for free!

That was my gut feeling, that titanium would be the thing. To me though, it lacks a certain earthiness that steel possesses. Plus, I simply could not paint it, meaning it wouldn't match

Really, last time I checked Ti (47.88) is on the periodic table of elements and steel is not. Can't get "earthier" than that. :)
