    Default Fish Sauce



    that's 4.5 pounds of produce jammed into a 1/2 gallon jar. with salt and fish sauce.

    What do you use it for? Ever make any? Favorite pre-made brand/source?

    I've started eating my kraut with fish sauce and can't get enough. Now i'm mixing it in with the chopped veggies-for a WP kimchee.

    Surely there are other applications.

    Besides baiting cat traps.

    warning to those who've not experienced it. this stuff smells like the mopwater from the fish market--fermented. don't say you weren't warned.

    It is sort of a magical ingredient. It smells and tastes horrible on its own. It does wonders when used in the right combinations with other ingredients. Add it to your teriyaki/kal-bi marinade.

    I get it at the grocery store down the street. They have a few different kinds. No preferences as to brand, etc.

    But honestly... they're all pretty good as long as they don't contain too many addititives.

    I've used it in place of worcestershire sauce when I wanted something that would add less color and sweetness. Granted, worcestershire is basically western fish sauce anyway, so that's not really too inventive. But a couple of dashes in various sauces can really make them come alive (especially various tomato based sauces) as long as you don't have too heavy a hand.

    Tamari, sesame oil, fish sauce...the holy trinity of my Amer-Asian adaptations.

    Add oyster sauce to gild the lily a bit more.

    fish sauce + lime/lemon juice + sugar + a bit of water and it'll make good "dipping" sauce for your meat base dishes such as stir fry.

    Nice. thanks for the nearly instantaneous broadenings of my horizons. i bet it's good on a cracker too. (impending cracker run)

    oyster sauce?! (oh boy)

    yes it's amazing how it meshes with everything, but then...

    My girlfriend does all the cooking, I do all the cleaning.

    She uses this brand of fish sauce, every time I see the label it creeps me out. Something about that little dude on the label just gives me the chills.

    I've used 3Crabs, Squid and Tipparo's curently I like 3 Shrimp Brand. We eat a lot of Viet/Loas/Thai food here. My current favorite blog is the Ravenous Couple tasty and authentic.

    Been stalking the kitchens in the Tenderloin and Little Saigon on this side forever it seems...one store had a Giza pyramid of the stuff: LIMIT 8 PER CUSTOMER ONLY!!!!!!!

    Three Crabs. Some have more sugar to hide "off" flavors I think. What's an off flavor? Well if you gotta ask...

    Using it right now in a lentil / smoked pork butt thing. Just a few drops, for mouth feel, depth, sugar.

    Met a white guy recently, his Viet friends call him the Black White Guy, but really he eats shrimp paste with a spoon straight. Sick.

    The Three Crab guys came out with a Five Crab super dooper sauce. Why it's 2. More. Crabs. Of course. Haven't seen it in awhile; even marketing has its limits.

    WTF they're "tasting" fish sauce like its gin. You cook with it you'll end up screwing up the purity of SE Asian cuisines. So lame.

    same combo (easy on the sugar) plus some basil, a few drops of sesame oil and some chilies (and maybe a little chicken stock), added to sauteed chicken makes great stir fry. love it with coconut rice

    wow! eating shrimp paste straight is very brave!

    also, the fish sauce bottle at the top from the OP, there is a description at the top... "Nuoc Mam Nhi." if you get a bottle from the Vietnamese island of Phu Quoc, it is one of the best in the world. top quality. this refers to the way the fish sauce is filtered. and, you can taste it raw and it is not as salty as the lower quality type of fish sauce that one use for cooking.

    I'll eat just about any manky fish product straight up.
    I like:
    sesame oil
    lime juice
    rice vinagre
    fish sauce
    tamari
    sweet chili sauce
    Start with ~ 1t each and blend up to taste.

    I also like the chopped Thai chilis (the thin deadly ones) chopped rough & soaked straight in fish sauce - most Thai resturaunts have it if you ask, but it's pretty tough for most white people.......
