Chilaquiles - heck, yeah! Breakfast lunch and dinner. We also do lots of migas - stale corn chips scramblrd with eggs, salsa, cheese, top with a dab of sour cream and eat.
Another house staple - short grain brown rice and black beans, simmer it up with olive oil, french tyme, and garlic. Eat on toast, mix with scrambled eggs, or in bowl with Jamaican hot sauce.

Light dinner in 10 mins or less- From basic staples usually available in our kitchen, boil water, throw in box of frozen spinach, cubed tofu, any orphaned fresh veggies like those last 2 wilting carrots. Bring almost to boil, turn off the heat and add a couple of generous dollops of shiro miso, don't cook the miso! If you're worried about being hungry later, add a side of rice sprinkled with japanese nori rice seasoning. Done.

i'm all about big messes of food.
just fried up some sundried tomato polenta with sweet italian sausage and dumped some kidney beans with spicy marinara sauce ontop, with assorted spices and greens.
mighty tasty and filling by all accounts.
