That looks great! I don't eat meat but can appreciate the construction.

Mine is gone already. Hummus and ajvar with garlic dill pickles on locally baked whole wheat bread - a nice crusty boule with chewy insides!

‘Rican bento. Mofongo, seitan encebollado, habichuelas guisadas, simmered sweet potatoes, rice.

Israeli/Iraqi bento. Deconstructed sabih (fried eggplant, boiled egg, chopped salad, mango pickle, zhoug), roasted veggies, Asian pear and basil salad.

Dosirak. Myelochi bokkeum, oi bokkeum, gamja jorim, woowong bokkeum, braised kale, rice, kimchi.

I only make my own seitan about 15% of the time. It’s satisfying... but a long process. Often if I have that kind of time I’d rather use it for something else. I’ll make my own when I want something particular out of it, but the options I have around here are pretty good.
