    Default Yeast

It is near impossible to find dry active yeast in my area lately. I did find some of the small bricks of yeast the other day. I am not sure of the conversion between these small bricks vs one small packet of active dry.
Also, is this used in the way, in warm water or another way.
I think the bricks are 1 small brick =2 packets.

I use regularly two different brands of "brick" yeast (it is actually fresh yeast, opposite to the dry one) to make bread, and each brand works a bit differently so it is difficult to stablish a equivalence with the dry yeast you use. Different brands of dry yeast also tend to work a bit differently, so unfortunately you will probably need to do a bit of trial and error.
