    Five years ago I hatched an evil plan to harvest fiddleheads. My local plant club was willing trade some of my pure white dwarf hydrangea for several trash bags of Ostrich ferns. I'm looking at a massive swath of the buggers right now. Next year will be harvest time ;)

    Aw shucks...

    There is still a bit of me that wants the pork fat too... I still have a small amounts of it at chinese restaurants or when I need prosciutto on a pizza...

    I cut out all beef and 95% of my pork when I got my camping/photo truck and wanted to make a real personal offset. That was over a year ago now and I'm really enjoying going meat free.

    Dehillerin is my last stop before flying home after visiting my Sis. Everyone waits outside at a cafe, rolling their eyes. No love for my obsession.

    This Tempeh is making me thirsty. Long patient wait. The biomass is generating it's own heat now so I know I'm on track. Temp. is about 74F right now. This just might work.

    Day 4 of the great northern bean tempeh and it is sprouting nicely. The beans were a bit overcooked, but should work really well after a day of chilling in the fridge.

    Basic Sichuan preserved tofu and available vegies over noodles from two provinces away...

    The basic flavoring: Laoganma chili oil with black bean, sichuan peppercorns, sichuan chile pods, ginger, garlic...

    Guy, I'm a big fan of those wide noodles. Looks great.

    Covrt - Bad news, I got excited that the ferment was generating it's own heat however after patiently waiting 30 more hours there is zero action and the soy has gone soft. I'm tossing it and will try again. Me thinks I killed it early on with too much heat. I've since figure out how to manage a steady 80F at least until I've got my incubator constructed.

    That's a bummer! I have had that happen too many times. One day of heat is plenty, and then let it sit and do it's own thing. This is day 6 of just sitting in the wood box with a damp towel over top. This is now ready to wrap in parchment and let sit in the fridge for a day to harden up a bit.

    The little darker areas of mold are completely normal. As long as they are not a black mold, you are just fine. You know it is growing well when the mold spores grow through the towel too!

    Socially distant trip to butcher today yielded some scallops, merguez, and a 10lb brisket. Gonna make this one count, and figure out a neighbor or two to share it with (contactless).

    If you do it my way, it is normally 6-7 days. I am still working on that video for you. Other client work got in the way and I am still waiting on photo gear.

    Mrs. RW’s Mother’s Day breakfast. Pretty simple really, Belgian waffles with whipped and folded egg whites, which makes all the difference for the fluff factor...added some blueberries and a little powdered sugar for good luck.
