    Default Cooked: Michael Pollan's four part series on Netflix

    I watched the first series...Fire...while on the trainer this evening. It was awesome and I can't wait to watch the other three series. You meat cookers and BBQers like a Dustin, TT and Bruce...you will die when you watch the last half of this episode which discusses the history of pit BBQ and responsible animal production and harvesting. Warning...this is not a cooking show but a documentary about the science and cultural history of how and why humans cook. I hope that I explained it well.

    I watched it all last summer with my wife. It's great entertainment.

    I liked it. Episode 3 is 'Air' and is all about bread, it's cool.

    Another show I'm enjoying is Ugly Delicious, also on Netflix, recommended by someone else here on vSalon. They touch on the culutural and historical significance of various foods. Episode 1 was pizza, tacos on episode two, which is far as I've made it so far. But I know BBQ is one episode, which should be fun.

    EDIT to add, I like the show a lot better than the trailer.



    There's another interesting BBQ documentary called Barbecue, again, on Netflix.



    Also, can we all agree that Netflix is, by far, the best 'channel' on TV?

    And one more food documentary focusing on sustainable livestock - One Hundred Thousand Beating Hearts.

    White Oak Pastures isn't too far from here (relatively speaking), we've been to their store and bought some stuff and it's tasty! I can get their ground beef at all the local supermarkets and and it's all I buy now. And yes, you can buy their stuff on the web and they'll ship it to you.

    This is the whole thing, it's only 15mins.

    I've mentioned this before but Chapel Ridge Mercantile in Gettysburg PA will suit your needs if you have a freezer. Closed herd, grow their own feed and amazing beef. They butcher/cut to your specs.

    One word of warning, I'd stay away from the beef short ribs. I bought some at the store (they were frozen) when we visited. They looked good, nice and thick. But a few weeks later when I thawed them out to smoke them I discovered it was actually two racks of ribs laying on top of each other, and it was basically all bone, no meat. That pissed me off.

    Local food is where it is at. I do a local meat CSA that has lovely locally produced grassfed Beef, Lamb and Pork. Yummy taste, good for the local economy and good for the environment. Quite a trifecta.

    sounds like those might've been "back ribs" instead of short ribs. i woulda been disappointed too.

    They were labeled as short ribs, four bones in each rack.

    It's okay tho. I recently picked up this MONSTER rack of beef ribs (I think it's both back ribs and chuck/short ribs) from an even more local grass fed cattle farm. I'll have to get it cut down before I can cook 'em tho...they won't fit in my smoker, and the bones are too long to fit on a plate hahaha.

    7 bones, each about a foot long. 21" across corner-to-corner! 10.25lbs!

    No kidding, I think a properly done BBQ Beef Rib is one of the most glorious things ever to grace my plate. The BBQ outfit was, of all places, in Leesburg Virginia and one rib was a meal.
