    Default -- your tuna salad recipes please..

    --some folks coming over on a hot florida friday evening..

    grilled a mega fresh tuna fillet drenched with extra virgin cold/first press olive oil from sicily..
    diced into small chunks then tammy took over with her special component/dressing.. (my poison test.., if any better --- the rascal is still swim'n in the blue-deep..)
    fresh baked crusty loaf bread impregnated with rosemary/basil/sun-dried tomatoes..
    fresh waldrof salad & fresh key lime pie made with limes from a friends tree in key west..
    & plenty chilled andretti white wine spritzers with a slice of lime on the rim..

    no hold'n back with a smile..,

    Mine is for sandwiches (rye bread with lettuce maybe a tomato) and was stolen from the Nieman Marcus lunch cafe in Northpark Mall in Dallas, TX

    Good canned tuna
    Handful of pecans per can
    Can of slice water chestnuts
    Large spoonful of soy mayonnaise
    Salt and pepper

    Into a food processor.

    Chopped celery adds the prefect crunch, no matter the rest of the ingredients.

    Kirkland (costco) tuna is pretty good stuff.

    celery
    pecans
    halved red grapes
    little pepper & salt
    dash of sriracha on top - never blended in

    Sometimes I like some green olives in there
    Always dill pickles, I am overloaded with them
    Occasionally I will substitute a ripe avocado instead of mayo when I feel gourmet

    We make tuna salad with chick peas , and it is amazing.

    1 can chickpeas, drained and rinsed
    1/4 cup vaganaise
    1 tablespoons rice wine vinegar
    1/4 cup chopped celery
    2 tablespoons sliced scallions
    Pinch cayenne pepper, optional
    Freshly ground pepper
    Paprika

    Mix it all together and put it on toast. Good stuff!

    I get canned Bonita & Yellowtail from a cannery in Baja - La Bocana.

    They aren't even on the WWW as far as I can tell = it's heavenly - otherwise, I smoke the fish myself, like these 20 kilo yellowtail or this Bonita, this is a slab of YT.

    Keep it simple - it's all about the fish!

    * Smoked fish, flaked
    * finely diced celery
    * finely diced green onion
    * just enough mayo to stick it together
    * S&P to taste

    Garro, you damn braggert.!?!. Hopefully my kayak fishing trip to the bay in a couple of weeks will provide fresh quality ingredients.

    I worked in an Italian deli (not a gourmet one) in college (D'Agostino's East Arlington) and we'd mix Italian tuna packed in oil with chopped pickles, tomatoes, onion served on a sub roll with with lettuce. Not bad. Now I'd probably add to that parsley, and capers and lemon and Aleppo pepper.

    When making mayo tuna I always liked what my mom did which was to add grated carrot, fresh herbs, celery, lemon maybe.. can't be sure.
