The great thing about fish tacos is that they are very difficult to make badly. At home, I'm partial to any cheap white fish, grilled in tinfoil with a bit of butter and lime. Add lettuce, Pickapeppa (or Sriracha), avocado, and you're golden.

If you ever get up to the Jersey Shore, Surf Taco is the spot. The original is in Pt. Pleasant but they're multiplying like rabbits. The next best spot would be their stall at the Lakewood Blue Claws stadium. There's not much better on a summer night than AA baseball. Add a fresh sunburn, a fish taco, and a beer. Yup.

If I'm feeling ambitious - I'll do corn masa tortillas at home, a nice papaya salsa and some grilled mahi.

If I'm feeling ghetto - sautee some canned tuna with some olive oil, garlic and capers. Stuff in store bought flour tortilla.

I've been on a blackened fish or shrimp or sweet potato taco kick.

Marinate 1 lb fish or shrimp or diced sweet potato in
    1/4 cup EVOO
    1/4 cup chopped cilantro
    0.5 tsp cumin
    1.5 tsp chile powder
    1 tsp oregano
    2 roasted/diced jalapeños
    S&P

Cook in a screaming hot pan
~ 3 min/side for fish (or to your preferred doneness)
    - until shrimp is done
~ 5 min for sweet potato then transfer to 400 degree oven for 15 minutes

Serve with lime wedges, crema (or sour cream with lime zest & lime juice mixed in), avocado, cabbage, fresh cilantro, grandmas homemade zucchini relish (like store bought relish but ~1000x better), & fresh corn tortillas (I'm no good at making these, so I buy them down the street at the local tortilla stand)
