    We lucked into a handful of KAI Pure Komachi knives at a kitchen store's going out of business sale. Best $50 spent ever. A Nakiri, a Santoku, several different sizes of paring/utility knives, and a chef's knife. They are made out of some kind of thin but stiff steel and coated with paint. They sharpen to a razor's edge, but each one has its own plastic sheath. So you just throw them in a bag of supplies and take them along. Really convenient and surprisingly bulletproof (as tested over 10+ years of annual vacation with my family of knife killers.)

    Did my first handle install yesterday. Had to remove a little from the tang with an angle grinder but it turned out pretty swell.

    Nice haul! Remember that edge if you are toweling them off. Our collection of kitchen towels is now the "samurai" collection.

    Indeed. My cleaning sponges bare the scares from those scalpel like edges.
    My wife is seeing radishes and carrots in a whole new light...
