No offense, but if this doesn't get updated soon, I'm putting you on double secret probation since I have declared myself a moderator for the day. Thank you.

To all those interested in the pigs head.

I'm in the middle of working 8 days in a row right now. The Head is in the freezer. It'll be a week or so. Sorry to tease you like that. I thought I was gonna be able to cook it shortly after I got it. (For the record it came fresh (not frozen), which blew my mind. I really didn't want to freeze it, but work is extremely busy this month.) I promise there will be a full blog post and a thread about all the lovely things you can do to turn a pigs head into a delicious meal for you and your friends.

My Plan is to rub it down with salt, sugar, and black pepper. Roast at 225 for 8 hours. Put it in the middle of the table and give guests access to fresh tortilla's, limes, and plenty of salsas. Pigs head tacos.

The Pig's Head is in the Oven. I'll put up a full blog post tomorrow.
