BBQ nachos. Another Memphis delicacy. Try going to a sporting event there without ordering some.

Default Barbecue of Merit (cheerleading thread)

Want to toot the horn of a professional outfit or your hometown contest team or report on the bbq next-door, here's the place.

I'll go with: Slick Pig in Murfreesboro, Tennessee (Jerry Robinson). Best smoked wings ever and also good red sauces-not too heavy and plenty of heat. Like all good BBQ stands, the place is slammed at lunch every day they are open. iirc closed sunday and monday.

it's in the marinade. i'm working on it.

    Ridgewood Barbecue, Bluff City, TN

It's a 30 minute drive from anything, and I've never gone there without waiting at least 20 minutes for a table. They smoke and slice hams (instead of shoulders), and then finish them on a flat top with a little sauce. The baked beans will change your life, make you a better person, and make bald people grow hair.

    Default Tenneessee BBQ

    Tennessee Barbeque L.L.C. - Home

Is a little joint in downtown Livingston. Livingston is a town most of you will never travel far enough from interstate to encounter. It's north of Cookeville which is on 40 east of Nashville.

I happened through there at supper time with my Mom. I was cruising through downtown looking for any MOM/POP joint, non-franchise, populated eating place. This is the first time I actually went looking for a crowd to follow.

It worked. Lot was packed, service was fine. FRESH pork-skins!!! told the tale right up front. Pulled pork was great, hot sauce was substantial, and I'll always eat there every time I return to Livingston. (if ever).

Last time I had fresh pork skins (at a restyrant) was Fabens, TX (farfarwestTX).

I tried to buy the t-shirt, but they were out of my size.

dude, there's a ton of wonderful _not meat_ things to be smoked. I've done jalapenos, pineapple, onion, potatoes. have seen cabbage, corn, etc. and besides that a little meat never killt noone.

    we do too.

Yeah, this is the _public commercial joint_ bragging upon thread. SEE other threads for personal secrets, techniques, rub formulations, temps, timing, order of operations, etc. If you hit a local stand that rocks, bring it here. It's very rare for me to buy bbq made by anyone else. Have 12# "on deck" right now...probably tomorrow.

If you're ever in Tulsa (like for Tulsa Tough) go hit Elmer's BBQ. It's the best in town.

BBQ in Tulsa means brisket? I eat brisket only when out west, as you can't trust these Southerners to do it right. And by "right" i mean how they do it around Dallas. Corollary, I don't order pork when out there.

This is for commercial joints, all bets are off at a contest or at home. I got a bro who does a fine brisket, but i've yet to work with one.

Ben Wade and Me - What say after I retire from my day job and start to do my coach / sports camp thing full time we put together a BBQ'd Bicycle Tour of TN? Frankly, the riding in TN is off the hook and just hearing what y'all are calling good eats is ENOUGH....I can't take it anymore!!! This is a done deal. Figure on two yrs. and we are doing this thing. Start making queue sheets of all the dirt road rides you know that end at a BBQ joint ;)

Part of me thinks this is the greatest idea ever. And part of me remembers that every time I leave one of my favorite joints, I'm semi-drunk, and so full that I'm praying for death and wishing that someone had brought a wheelbarrow to haul my fat ass to the car. Do they make those pull-behind kiddie trailers in adult sizes? I'm 6' even, so I figure Josh could pull me and the proportions would be equivalent to a normal-sized adult pulling a child.

I think I've mentioned this here before, but a couple of buddies and I put on a bbq, craft beer and music festival every May. Every bed, couch and open bit of floor space in my house is spoken for that weekend, but I'll be beyond happy to hook up any v-cat who wants to make the trip. And the riding around here is every bit as good a advertised, from endless hilly, winding country roads to a 37-mile rail trail to singletrack that completely shocked the IMBA guys who came to do a trail conference here last year.
