    Default Hummus

    My wife and i cook alot, eat in almost every night. I need a good hummus recipe, i like to keep it on hand for sandwiches or veggies. However, i have never been able to make it from scratch. I want the good, creamy-dreamy kind, smooth as silk. Do you start with canned beans, dried beans, soaked beans?? Need to know

    I have always used canned chick beans, never been a problem and I dont rinse them though.
    roasted red pepper hummus
    in a food processor:
    2 cloves garlic
    1 can (15oz) chick peas
    1/3 cup tahini
    1/3 cup lemon juice
    1/2 roasted peppers
    1/4 teaspoon dried basil
    cumin to taste is nice
    salt/pepper

    i like to add the juices from the roasted peppers as well, helps to smooth everything out.

    Tele's recipe looks like a perfect start
    Of course the number of variations are endless
    Google search "hummus recipe" and you'll see
    Instead of a little raw I use tons of roasted garlic
    So fast and easy to select ingredients and start doing it
    Cannot make a bad batch just modify to taste each time

    I am going to use teles' recipe to begin with. I bought some dried garbanzos and some canned garbanzos, i am gonna do the recipe the same way only using the different beans. I can see if it really matters or not. Yeah, the recipes are endless as far as what you put in there, but the basic-best hummus is my desire, add on later. I will get back with the research for a final analysis--canned vs. dried---age old to say the least

    There used to be an local fellow who made Hummos using Fava beans that was nicely seasoned with garlic and good olive oil to finish. Outstanding.

    full report.. I used both the canned and the dried beans, and the dried beans were spot on better. I actually made 3 batches of hummus, all the same exact way only changing the beans. I used the dried beans 2 ways, one was thoroughly cooked and the other was almost like al dente pasta. The best result was to not cook the beans all the way, about 10 minutes from being "done". I followed Teles recipe, with exception of the roasted peppers and basil. I just wanted the good base recipe. So once i had what i liked, i walked outside picked some dill and a little cayenne, and boy howdy it was spot on.. Slathered unsparingly on my wifes homemade bread, picked a fresh cucumber and mater, shot of salt--done deal. I have enough hummus left to take a sandwich everyday this week!! I love this section of the Vsalon.
