    Default Cedar plank salmon

    Got some nice wild sockeye salmon and cedar planks ready to go. I have found a couple easy recipes on line that look OK. Anybody have any good recipe on cooking this way? This is for a get together with the neighbors on Monday, so it needs to slay.

    don;t do a damn thing to 'em
    soak those planks good
    sea salt
    white pepper
    MAYBE
    a lemon slice or 2 and sprig of dill
    and walk away
    "make the break"

    in my experience after planks are fully soaked (so they do not burn and crumble)
    put them in the covered grill alone and get them to smoke before you place the salmon
    the salmon doesn't take so long to cook and you want to get lots of that wood fired flavor
    also, cedar is good but there are other wood varieties you may want to try and compare

    Very timely post. I have three halibut steaks a friend brought me from Alaska. I was thinking plank on the grille.

    How long do you need to soak the planks?

    The plank instructions say 2 hours. My basic understanding says that more soak isnt necessarily worse. The key is to have them really waterlogged so they smoke and char, but not burn. Burn is bad - they recommend having a water spritzer nearby to put out flare-ups as well.

    Lots of ways to go with Salmon on the plank. For one, dump some tamari or soy sauce in a zip loc with some roasted or sauteed garlic, ginger, olive oil, a little mirin, and maybe a cup of white wine (like an SB). Don't leave the fish in this overnight -- just maybe an hour before it goes on the grill.

    Fresh herbs on the plank beneath the skin can also be good. I like basil or thyme. Dill is a familiar stand-bye for salmon.

    Went simple. Ground Hawaiian sea salt and black pepper. Lemon zest and slices from the meyer lemon tree in the yard. Brush of olive oil on the planks, medium heat on all 3 burners on the grill. About 15 min cook time total.

    At start:



    Lots of smoke, no need to be alarmed, that is supposed to happen.



    Off the grill, ready to serve



    A whole lot of delicious on the plate.
