Father's day dinner for my dad. Blistered asparagus and shishito peppers over burrata, kale and crispy buckwheat/kasha salad with vinegar soaked raisins, mushroom wellington, and a lemon tart (devoured, not pictured).

The basic batter is pretty simple:

1 cup flour -- Traditionally this is made with Chickpea flour, 50/50 with AP is a good starting point, but it can be straight AP or a mix with whole wheat. I'm going to try it with buckwheat sometime.
1/2 tsp baking powder
salt and pepper
1 to 1 1/4+ cup water -- Add water slowly whisking the lumps out. texture after whisking together should be like heavy cream

To this base let your imagination go wild. This iteration was shrimp cut to small pieces, cilantro and scallions. Parsley and diced onion or shallot are lovely too. Smoked Pemonton might bring something fun. Any fresh herb is a win. Protein can be any small pieces of scallops, squid, flakey white fish etc.

Yes, we don't see much until at least the second week of August. Early September when people want to jump the gun on apple picking is actually our best time for tomatoes.

Last time we had baby backs I cooked them in the InstantPot, which was a huge mistake. This weekend I redeemed myself and smoked them like God intended. They were fantastic. It was the little lady's first time being given a whole rib, and she ate two of them!

Redneck Decadence!!!

Fried softshell, with fried green tomatoes, deep friend bacon on wonder bread with real mayo. A side of fried scallops just because I can. #YOLO !

Couscous with scallops, fresh corn, cherry tomatoes, jalapenos and zucchini. Didn't realize how many new world flavors were in this dish. Made this yesterday as well with arctic char but ruined it with really old frozen corn. It's all about fresh ingredients -Mike G

My elderly neighbor told his son (who owns a farm out on Route 323 in Brebouf) that his American neighbor on the lake was quarantined in his cottage for two weeks having just come into the country.

The son called and said he had left a gift at my front door.

Thankfully, I had all of the spices and liquids in the cupboard to make an Eastern Carolina rub, mop, and sauce....and there was enough charcoal and maple chips for the Webers.

Chile Rellenos stuffed with Massachusetts Corn. Home grown poblano peppers, corn from about 2 miles up the road, home grown garlic, onions, yogurt and jack cheese.



Stuffing:


Home grown brandy-wine tomatoes and avocado salad.

It was homegrown/farmgrown night with some family members...pickles, asparagus, tomatoes, corn, potatoes, peaches, cantaloupe and watermelon, evened out with some grilled hotdogs and hamburgers. Nice way to end the weekend.

Picture doesn’t do it justice, but a tomahawk chop from the farm Picardier’s store out on Route 323 cooked on the Weber with charcoal and some mesquite done reverse sear method, some Brussels sprouts cut this afternoon and corn picked when the Weber was started from Loiselle and Gaetan’s farm up on Route 117. Missing from the photo are the yellow potatoes that were dug this morning by Loiselle that were being mashed during the picture taking.



And the whole family got to enjoy the meal.
