We ran out of pulled pork reserves, so Saturday night I put a butt on the smoker and we had some fresh BBQ for lunch on Sunday and have enough left overs frozen to last a few months.
7lbs butt, rubbed with Butt Rub, a couple chunks of hickory for smoke, smoked it at ~240*F for 15hrs. Didn't get a pic after I pulled it...

Before the Instant Pot there was the Crockpot...35 yo and it still makes a mean pulled pork slider. Coupled with homemade Mac n Cheese topped with bacon...recent college graduate’s meal request to Mrs. RW. PS...that’s homemade cheesecake too.

We had some good friends over this evening for dinner and the call went out for grilled pork tenderloin. The final presentation was in the form of marinated tenderloin kabobs with orzo, grilled tomatoes, grilled broccoli, grilled naan and a side salad.

So! What to do when you are asked to make "finger food" for a Sunday house reception and you only have crackers, sour creme, dill, farmers cheese and fish roe on hand?
Wing it. I'm nowhere in the league with most of you when it comes to presentation but the taste ahhhhhh I can do that :)
One nice cracker, sorry all out of pumpernickle toast points. A smear of excellent sour creme topped with a slice of fresh farmers cheese, cracked pepper and salt than dill and fish eggs.
Not so bad.

The wife found this recipe for flank steak and we tried it last night. This was my first time cooking flank steak. IT WAS AWESOME. We let it marinate for ~4hrs in the fridge, cooked direct over a pretty hot fire on the grill, turning every ~2mins or so. Cooked to an internal temp of 130*F, then wrapped in foil to rest for 5mins.
Sliced it thin against the grain - you want the slices no thicker than the width of a pencil. Served on a bed of arugula, drizzled with left over marinade (which was brought to a boil on the stove while the steak is on the grill).
Super, super, super good, and easy. Would be good for a small group too. I didn't get any pics.

Let the seafood summer roll on!!!! Brought home 60+ pounds of Yellowfin that I will be sharing generously. Cooking for 20 folks tonight, 6 tomorrow and handing out bags to many friends. Trading some for Striper as well. Will still freeze some but ATMO Tuna does not freeze as well as white fish.

Apricot glazed grilled chicken with broccoli, red potatoes (both cooked in foil on the Weber) and a side garden salad. Washed down with some San Pellegrino and a nice Spanish white. Perfect Memorial Day meal.

Last night the plan was to grill some burgers and some corn, and bake some french fries in the oven. Oven was pre-heating, grill was lit and warmed up and ready (on the covered back porch), and then a storm blew in and we lost power. So we cooked everything on the grill! No pics as it was getting dark by the time we sat down to eat.
The corn - gave it a light coating of olive oil and grilled it, then cut it off the cob and mixed in some butter and crumbled queso fresco. Crazy good. Had we been more prepared, some cilantro would have really taken it over the top.

Playing bachelor as the girls are over at Grandma's for the evening so it was time to raid one of the patio planters and make the first batch of pesto for the season. I found some leftover homemade bowties, some sauce and some hot cross buns from my Sister-in-Law, so it was off to the races.

Grilled some corn and a flat iron steak. Marinated the steak in balsamic vinegret, Worcestershire sauce, and garlic. Sprinkled some rub on it and gave it about 3mins per side on a 500° cast iron plate. Perfect! Not pictured is the store bought sweet potato tots. After dinner went to take care of the pup across the street while her folks are away for the night. Cotton is a sweetie.

We had some friends over tonight for grilled flank steak which was marinated for 12 hours in essentially what was a Bloody Mary...yes including the vodka. Served with smashed baked potatoes, grilled naan, arugula salad and of course a nice red wine. Dessert consisted of homemade strawberry turnovers with vanilla ice cream.

We are Glamping in rural VA not far from Roanoak but far enough. Nearby town of Floyd has a mid-week market so I scored a nickle bag of local grown mushrooms...the legal ones. Made that into a omlette with a loaf of local sourdough. Yumm.
