    We are having about 20 or so folks over this evening for hors-d'oeuvres and cocktails and Mrs. RW has her Martha Stewart game face on. Let's start with the profiterole or cream puffs as they are known to this peasant. My role is limited to lighting the luminaries, cleaning the shrimp, tending bar and playing barista.

    I had a great boss when I was a young pup and he was a West Pointer with loads of great antecdotes and sayings such as "Saunders, remember the four P's and you can't lose. Proper Process Prevents Problems."

    I don't know where he picked it up, but I was told from my dad more than once "Prior Planning Prevents Poor Performance"

    Photos were taken right before the dessert platters were placed on the table and guests started arriving which prevented me from having a chance to take a complete table shot. Those little crackers at the end were homemade as well and paired with some Stilton cheese and a hearty Port. Given that the majority of the guests were my wife's friends (running joke in our household), there was "no creampuff left behind".

    smoking started an hour ago, 10:30pm here, three briskets should be done about 11am tomorrow. At 9 am we'll add 12 rack of ribs, baby back and spares, one 14lb injected turkey, and some 30 or so drumsticks for the little ones--easy for them to hold onto.
    we heated the pool to 90, didn't really think it would make it that high, and most of the neighborhood kids will join my grandkids for some BBQ and swim party, in the middle of winter. Perfect.

    Hoppin' John for the new year, with homemade cornbread. We can use all the good luck we can get!

    Soak black eyed peas overnight in water with a tablespoon of baking soda. Drain and rinse the peas. Chop red pepper, onion, celery (NO holy trinity) and smoked ham. 4 large cloves of homegrown garlic smashed and minced. In a heavy pot start lightly browning the ham in olive oil. Add veggies and cook till they soften. Add salt, thyme, 2 bay leaves and red pepper flakes. Once this is rolling add the peas and water to cover. Bring to boil then simmer 35-45 minutes till the peas are soft and the sauce starts to thicken. Serve on rice and offer freshly baked cornbread and butter.

    Smoked salmon, mustard sauce, Icelandic geysir bread (dökk rúgbrauð- 9 hours in the oven), and carmelized cabbage soup (also 9 hours in the oven). Had a lovely cider from Normandy that was aged in calvados barrels and am now finishing up with a glass of birch liqueur (Björk).

    That salmon looks tremendous!

    I did spare ribs on the Egg today. Nothing special.

    Bought my wife a subscription to Cooks Illustrated for Xmas and tomorrow we're doing their pork chop recipe. Calls for chops so thick that it's best to just buy a whole loin and cut them yourself. Looking forward to it.

    PS- I have re discovered pub cheese (Helluva Good is best but Wispride also good), and coupled with pretzels might be putting my recent weight loss at risk.

    Smoked some beef chuck ribs yesterday for 6.5hrs on the Egg. Wife made some almond sauted fresh green beans and some butternut squash/black bean/kale stir fry. Sunday dinners are the best.
