Because sitting post-ride digging burrs, thistles, and all manner of stickers out of the laces seems like such a great alternative.

They look cool but I see giant PITA written all over them.

No burrs, thistles or stickers on my local riding.

I have a pair of lace up Shimano touring shoes that I use when I know there will be lots of hike a bike. Softer sole in them. No issues with stuff stuck in the laces.

I had these shoes (blue accents instead of red) in my junior year of high school cross country, and proceeded to wear them as casual shoes until they were practically slippers, maybe five years later. They had a tongue that was connected to the shoe on one side, open at the other, laced up nice and tight for my narrow dogs, and a solid tread for dirt running. They were the best shoes I ever had and even today I can still remember slipping them on (sans socks, natch) at running camp and feeling like I looked badass and they were an extension of my feet.

So now, Adidas has re-issued them, and you can be damn sure they are the #1 item on my bday/Xmas list.
They even have a chi chi suede version with "tan sidewalls" that I may have to snag a second pair of.

Crazy how memories are so visceral.
