    Default Idea: Taco Gyoza

    I'm working on an idea and thought I'd put it out as it stands to see if anyone was interested in helping me workshop it a bit.

    The basic idea is that the filling be beef and/or pork seasoned with some basic taco seasoning, chopped cilantro, probably still some diced cabbage, and maybe some peppers. Then I'm thinking of plating with some queso fresco/blanco based sauce and/or something avocado based.

    It would probably be pretty good just like that, but I'm wondering if anyone has any bright ideas that would really make it zing. I'm interested specifically in a dipping sauce with a consistency and maybe acidity similar to the soy sauce/vinegar/rayu combo that goes so well with the traditional stuff, but more on the taco theme. Any ideas?

    Like the idea a lot and am going to try it at home when time permits.

    Going to try and make it with:
    Pork Barbacoa (with a heavy chipotle flavor)
    Fresh Diced Cabbage
    Chiltepin Chile's
    Red Bell Pepper
    Broccoli
    Lime zest

    Pan Fry them and side some guacamole made with tamari instead of salt (don't hate, it's good) and queso fresco with a little cumin mixed in it. Probably sriracha too, because.
    Cottage cheese for dinner, Greek yogurt for dessert, eat that everyday an' it will make your butt hurt.

    This is a great idea.

    I'd want to try it with only a few ingredients at first. Good carnitas or al pastor, plus red onion, cilantro, salt and pepper. Some kind of thin green tomatillo salsa with avocado instead of the traditional rayu. I'm getting hungry just thinking about it.

    Excellent idea. I'd dip mine in crema thinned with a little lime juice and a very smooth barbecue sauce with a heavy hit of chipotle and salt.

    Too many good food ideas here lately. I'm going to have to spend a lot of time on the trainer this winter.

    Afterthought: I'd try this with some pickled red cabbage. Currently drooling.

    My buddy taught ESL in South Korea for a while then moved stateside and ran a Korea taco truck for a bit. I can ask home some tips.

    This Mike's Hot Honey | Sweet Heat! Honey Infused With Chilies. can be drizzled on any of these with positive effect.

    Gyoza binge coming after Thanksgiving. Great ideas here.
