Looking for something to do with tomatoes

My wife just came in with 2 more buckets of tomatoes and I'm running out of things to with them. So far I have already canned more sauce than we had last year. Dehydrated a bunch and will do more tonight. Eat them in salads and all types of typical pasta dishes.... I'm not looking for sauce recipes but some new recipes to do something different.

There's a pretty good thread here about salsa recipes. That, or some kind of chutney could be good.

That pasta looks really good. I strain the tomatoes when I make sauce and freeze the water. It works great for making rice.

Tonight I am going to do a tomato curry with chick peas and onions. I will look at the salsa recipes.

Blanch in boiling heavily salted water, slip the skins, ice bath, freezer bags. End of story.

You don't have to decide. They'll be nearly vine fresh for months.

Burned into core memory. That's very very very close to something I've been making for 20 + yrs. His use of the tomato water / finish is killer.

I tried this using some pesto(just basil oil and garlic) from the freezer and homemade pasta. One of the best meals I've made in a long time. Thanks

Roast with garlic, add basil, freeze. Thank yourself in January.

eat tomatoes:

slice, season and marinate in olive oil with fresh basil/oregano/thyme/chives/etc. the flavors come together better around half an hour or so of maceration.

serve with warm goat cheese dressing:

whip equal parts creme fraiche and goat cheese, add a sprig of thyme, lemon zest, S+P, and microwave for 90 ish seconds. whip again when warm, drizzle over the tomatoes.

also: bloody mary's are nice. you could go full martha make bloody mary jello shots with vodka chasers.

cioppino is great with good tomatoes too.
