    Default Friends and Food

    Hanging out with friends from high school tonight so we decided to share a little seafood. We deep fried Soft Shell and shrimp for the main course.


    We pulled 2 dozen crab out of the pots cleaned, cooked and picked them for one friend to make crab cakes. He only wanted the back fin meat so I got to bring the rest home to share with the family. Love me some cold crab!

    My Kind of thread. Its Eggplant season on the farm, so we are gonna rock some Eggplant Parm this weekend. Its my favorite vegetarian dish. I'm not vegetarian, i just don't eat a lot of meat.

    fresh eggplant, fresh tomato and garlic, fresh basil, local mozzarella and a fine Parmesan cheese. ready to go...

    Leftover night mixed with some grilled cod tacos, scallops and veggies. Third cutting on our basil too, so some walnut based pesto is now in the books. All washed down with a Red Rider IPA.

    I WANTED to take pictures they would not wait so it's not my fault this time.
    Apparently, Mrs. Too Tall was out with the girls and came home raving about the resturant where they had dinner. They served whipped cauliflower...no other details.
    Trust me, in 22 yrs. of marriage I've never been able to serve my love Cauliflower with a straight face.
    Game on.

    Cauliflower Semi-Gratin (not sure what to call it)
    1. Cook flourettes al dente / immediately dump into ice water and drain
    2. Transfer to food processor. Season with salt / pepper / a few discreet chili flakes / tablespoon of flour / dash of cumin or your fav. just no nutmeg please
    3. Process the batch while adding 1/2 and 1/2 until it barely blends evenly than stop when it is still a little rough.
    4. Add shredded parmesian or peccorino or...you get the idea and pulse the processor a few times.
    5. Transfer to a 2" (ish) Corning dish or Granny's Le Creuset Stoneware, top with a few dabs of unsalted butter and extra cheese.
    6. Bake at 400 until you smell it.

    This was consumed in a blink. Embarrassing to see adults act this way really ;)

    Ginger garlic Bok Choy with Shiitake mushrooms over short grain brown rice and a really nice 2005 Grand Epenots from Michel Gaunoux which happened to be drinking really nicely.

    If you invite me to a large party and ask for a dish to share I'll probably make a massive plate of hummous. I've got a theory that the less you put into hummous the better results to follow. Focus on quality and well seasoned chickpeas the rest will follow.

    Fer sher Nic. I'm heavy handed with the stuff. America's test kitchen favors whipping the tahini first than adding the remainder. I've found it does make for a creamier result if that's your thaing'

    Ful medames (or however you'd prefer to spell it) is a big staple in my house - major fan. Definitely skeptical about the comparison to hummus (humous, humus..etc.), it's really a different dish with a different purpose, but similarly satisfying I suppose. Ful can be eaten on it's own, but is usually a base for the addition of a lot of other things, like pickles, chunks of meat (or tempeh, tofu in my house), grilled and cooled vegetables, hardboiled eggs..etc. It's super easy to make, one tip I have is to take the fava beans, once cooked, and hit them into a pan with the minimal amount of oil, super-hot (I like to use coconut oil for this, high smoke point) and blister them ever so slightly before proceeding.

    Sweating some onions for oyster-mushroom and shredded, smoked tofu bourguingnon, found these little critters on the thyme from our market..

    Plan for this lazy Sunday evening is throw some fajita and sausage on the grill with some peppers and onions. That along side some family tortillas and a corn/tomato/avacado salad.
