    What I will be cooking for many weekends

    Went offshore out of Pirate’s Cove on the Desperado. Great day weather wise and not a bad day fish wise. End up with a total of 156 lbs Dolphin. However, that is only about 1/2 our limit. Would have loved to limit out.

    We have family in town so tomorrow I doing a seafood feast. Fresh Mahi, Soft Shell and Fresh Blue crab!

    Been working on the pizza in the BGE recently. Did a couple Tuesday at about 650-675 degrees but the stone was too hot and they were burning on the bottom. Tried again tonight at about 500-550 and it was much better.

    WOW nice haul of fish. I really miss those days when my folks had a house on the bay. A local fishing boat would stop at our dock twice a year and unload a barrel of blue or rock. The family would form an dis-assembly line ending with lightly salted filets wrapped in plastic for the deep freeze and the cat got the guts/heads...crabs got what fell to the water. Good times OMG good times.

    Is there anything better than dead fresh seafood in my belly? Noooope.

    Peas are sugar snaps, cut once on the bias. Yep, tofu dengaku. Super easy: dry and slice firm tofu, mix up some miso paste (I like a mix of shiro and akamiso) with sake, dashi, mirin and a touch of soy sauce. Spread sauce on tofu and broil. Some like to lightly pan fry the tofu first.

    Do you make your own dashi? I did for a while but the smell of the katsuobushi drives my cats absolutely bouncing-off-the-walls insane, so I haven't been doing it lately. That tofu looks great.

    Yes, and the kitties do get very interested. Fortunately I can give them their dinner and take some pressure off. Have you tried niboshi? They are a little more work, but might sneak by the kitties.

    Those have to be some of the fattest sugar snaps I've seen in a LONG time...Thanks for the recipe. I have an excellent asian market nearby with the pantheon of tofu...it really gets a bad rap, great stuff.

    Failed at the photo but the dish sure tasted good. Love the fresh garden goods this time of year.
    Made citrus marinade and grilled the chicken. Zucchini and summer squash, mixed colors of bell peppers, broccoli, some seasoning all stir fried together. Added freshly made pesto from the days' basil harvest. It all went over red quinoa. Ahhhh.

    Summer soup. perfect. I'm countering with summer salad.

    Rainbow Swiss Chard
    Kale
    Yellow tomato
    Yellow Squash
    Canned Tuna (the good stuff)
    Olives (hot red peppers, olive mix)
    Lemon, EVO, Salt / Pepper vinegrette

    Combine everything let sit for a few hrs. *Easy on the dressing you can always drizzly more later or risk a marinated salad and that's not what this is. Sitting for a few gives the kale a chance to break down a wee bit.

    Second harvest of the backyard basil and it was immediately put to use as pesto on some grilled chicken. With the local farmer's markets in full swing, the fruit and vegetables are downright awesome. My daughter has two friends from college coming here for a long weekend, so the Weber will be stoked for maximum warp grilling speed.

    Another summer salad.
    Bruised/torn dino kale, cucumbers, tomatoes and goat cheese. Fresh lemon juice, EVO, black pepper, hint of salt and a light drizzle of aged basalmic.

    A couple of our daughter's friends from college are here for a long weekend and man can these girls put away the food and drink. A little grilled flatbread and Mrs. RW's homemade sangria (it's drained) to start the evening topped of with some fillets from the neighborhood butcher, grilled potatoes and asparagus (a regular at our house).
