    Simple spring festival dinner for the in-laws and any of their friends that are going to be by themselves this weekend. I'm going to bone a leg of lamb, put a big layer of mint leaves and dried apricots all over it, roll it up and tie it and then roast it. Small potatoes will get boiled and then tossed around in butter and more mint leaves and some asparagus will get steamed a little. We'll eat that with some cardamom bread and then fall to the desserts. My mother in law makes killer desserts. I asked her to surprise us. There will also be a lot of wine drinking after the kitchen knives are put away.

    I'm a Polack by way of Vermont and my wife's family is from Scandinavia by way of Wisconsin. Believe it or not, the lamb and the cardamom bread come from a Scandinavian cookbook.

    10 lbs wild salmon for an late Passover dinner.
    Court Buillion: Bay, celery, white / black peppercorns, lemons, tarragon, white wine

    Boil poaching liquid for 5 mins. reduce heat and let cool than immerse the fish and return to an slow bubble for 8 mins. per inch of thickness than turn off until cool. Can't miss.

    Serving with (non kosher) Tzatziki: Strained plain yougurt, olive oil, lemon juice, lemon zest, salt pepper, garlic , fress minced dill

    All on an bed of ice cold watercress :)

    Also decided to go with this Yemeni inspired Harosset:
    dates, raisins, figs, sweet wine, walnuts, almonds, cumin, ginger, cinnamon, cardamon. Chop in food process while adding wine. Stop when it comes together you don't want to make paste.

    Easter weekend. Full house, and my wife outdid herself.

    Friday
    Lump crab w lettuce apple salad and avocado served over cold tomato and red pepper soup.
    Lobster and chantarelle pasta
    Key lime cheesecake w rhubarb

    Saturday
    Clam, mussel, and scallop nage
    Sticky braised oxtail shreds, grilled filet steak, roast onions, kale and hedgehog taters
    Homemade shortbread, fresh fruit, and grand marnier cream

    And my sis brought down real bagels from Jersey.

    Did a little grill fest on Saturday. I did up some tri-tips in a marinade of soy, strawberry guava pulp, garlic, basil, oregano, fish sauce, red pepper flakes and cumin. Wife did some coconut crab cakes and a simple green salad. Friends brought over some pork chops marinaded in secret sauce and some curried shrimp for the grill. Picked up some local kine sweet corn that got boiled. Washed down with generous amounts of Sierra Nevada Pale Ale. And a little taste of Blanton's bourbon on the rocks after dinner. It was all good.

    First time hunting this morning, & within 5 minutes walk out my back door I find this and a couple smaller friends. Hopefully find more tomorrow - enough to take a basket full out to my dear sweet Mother next weekend.

    Good grief those morrels are monsters? What do you feed them?
    I think nothing goes better with wild mushrooms than simple eggs of any sort.
    An chicken stock based soup with an light brown rue would be second choice.

    from a few days back:


    thas: pineapple, cebolles, pork shoulder (4-hours before wrapping, 4 wrapped), jalapenos, whole fryers-breast DOWN (to make white meat tolerable), potatoes. the veggies get a short smoke then finish wrapped. first time for pineapple--will NOT be the last. meant to get some farm eggs on there, but had too much other going on--was playing with my new wood splitter between tendings. also in the skillet are the chicken fat/skin trimmings. these are shared with the dogs and the fat makes a great fire-box coating.



    morels from even earlier. hey, i was a bit bored with morels this year--share some morelcipes yo.

    thanks, that was for my bro's 50th. not pictured are the drumettes, leg quarters, and three more birds (nor either the liver/gizzard/stringcheese jalapeno snacks i had whilst cooking)...sorry, no pics of the presentation (i'm not really a "plater" yet).

    My brother/wife/nephew are coming to town for the weekend. Time for beer and grilling, which is pretty much all the time. Made up a guava bbq sauce last night, based on the CIA recipe. Guavajam, tomato paste, sherry, cumin, garlic, habanero pepper, dry hot chinese mustard, water, molasses, lime juice and pulp from the guava fruit from the tree in the yard. Sweet & tart both on the front side, with a pretty good blast of heat on the after taste. This will rock some pork chops world.

    We have other guests coming as well, I suspect that there will be some deep fried bacon wrapped shrimp on tap as well. Everything else is developing. Let me know if you are stopping by for a bite.

    Default Almond Meal Pancakes

    Ok, it's not dinner but I just made these for my recovery ride and they are amazing. I mean AMAZING! I've tried several coconut flour pancake recipes while in search for the perfect low-carb pancake and some were decent but none hold a candle to these.

    Ingredients:
    1 cup almond meal
    2 eggs
    1/4 cup water (for puffier pancakes, you can use sparkling water)
    2 T oil
    1/4 teaspoon salt
    1 T sweetener

    Preparation:
    Mix ingredients together and cook as you would other pancakes. I like to use a nonstick pan with a little oil. The only real difference is that they won't "bubble" on top the same way as regular pancakes. Flip them when the underside is brown.

    Yield: Six 4-inch pancakes

    Nutritional Information: Each pancake has 1 gram effective carbohydrate, plus 2 grams of fiber, 6 grams of protein, and 155 calories.
