Glad Lynne and Sally agree with me.

Not a fan of marble or wood for lack of texture. If the wood is too soft it absorbs flavors, too hard and it doesn't do the job. Similarly not a fan of the heavily textured ones mentioned above - too much loss and a pain to clean, plus results are no better than...

    A semi-textured cermanic one like Mason & Cash's.

I've got a marble one I bought at Kamei Restaurant Supply in SF. Works great. The bowl has enough texture to grind whatever I want, and it's still easy enough to clean.

They had me at "thai" but huh?
"its matte surface created friction for grinding but was smooth enough to wipe clean easily, and its heft made crushing a breeze from mashing delicate herbs to grinding stubborn peppercorns. The bowls deeply sloped shape and matte texture keep ingredients in the center. The pestle and inside surface of the mortar are polished smooth"

    Polished yet textured?

Anyway, best to hold these in your hands before buying if you can. Going to hit up my Laotian buddies on E 12th to see what they got. Local via the far east, yo.

Weird. Been in that store years ago and have eaten at nearly every resto on Clement but don't remember what they have. Must bring the bike as parking is horrible.
Buddy works at Economy Resto Fixtures so he hooks me up with the bro deal. Good stuff there too.

yeah yo my marble is finished to high polish everywhere but where it counts. unlike the one the splendid gal is pimping, mine is ground quit nicely and flat on the bottom. it came from some cooking outlet store. that's why i've "ordered" one. i don't do malls. there's plenty of texture (i checked it--concentric rings as if rough machined on the interior) and it cleans best with a dab of hot water.

the pestle is smooth. i use the flat end of the pestle to crack corns and i don't care...

    shit i'm sober again...

I suppose you have one of those hand crank margarita mixers eh? ;)

    great article. thanks

ask my pal (who cooks) about his m/p the other night. he showed it to me-much bigger than mine i now have mortar & pestle envy.

as i see it, a chef needs more than one*-as that article 'splains a bit about.

*as with knives or bikes or shots of tequila.

yeah, mortar and pestle is good for home-brewing black powder ...

So when you are grinding black powder, do you prefer a polished finish or the rougher finish?
