Funny you mention the Xinabajul. I cooked up a half pound Saturday night. I took it to just after the end of first crack. I wish SweetMaria's still had the Guatemala La Liberdad. That was one I really enjoyed.

This morning was my first (and second and third) attempts to use your Colombian. I am still trying to dial in the grind. Here was my third cup, which was still a tad overextracted based on the shot timing:
After three pulls, I was too jittery to keep trying! More tomorrow morning.
Thanks for the pic. Your comment made me do some digging. Since I am flying solo on all of this comments really help. Based on some inter-web research I need to change my grind a bit courser not finer.
Silly me, I ruined a shot for a pal at dinner tonight which, in retrospect, was over-extracted bigly.

That's the basics, yeah. I don't have a measuring glass but I usually shoot for 20-25 sec for my shot, starting my time when I start the pump. This morning I tried 3 different settings and got pretty close on the second pull. By tomorrow I should be dialed in, I hope, and then can give you my tasting notes #suchastheyare

Your beans in my Italian Moka pot is outtasight. Might have seen Vishnu after a mug of that brew. The Moka pot really brings out the acidity which I appreciate.
Same here, I've almost got the grind right for espresso. This afternoon should be the finale. Three tries to get it right, not so bad.
My MACAP is stepless so I'm using bits of blue painters tape to keep track.

TT, I think I have dialed in the grind, but it has been a challenge, for whatever reason it took me a while and I had to bump the dose down to 17.5g from my usual 18g to get a proper pull. That said, now that I have it I am tasting a surprising amount of citrus on my tongue! Then as it cools I am tasting more of the 'coffee' for lack of a better term. Very interesting stuff.
I am headed out of town tomorrow but I am taking Old Shoe with me; won't have an espresso machine but will try other brewing methods and report back from the road!

Wow!, had a chance to pull a shot this morning. Definately could taste a berry flavor in the shot. Really, really good taste and aftertaste. I need to get the grind dialed a bit as I think the pull was a bit uderextracted.
Shoogs, this is a really good blend/taste. Can't wait for the afternoon post ride shot.
