    Whole bunch of sacrilege here - avert your eyes should you be offended by vegan chili (*gasp* with beans).

    - Cut 1.5lb waxy potatoes into 1/2" chunks, cook in salted, boiling water until soft (15-20min) - drain and set aside

    - To a soup pot, add: 1 yellow onion (diced), 3 jalapenos (sliced thin, lengthwise), 2 poblanos (sliced thin, lengthwise and then into 1" length strips), a bit of olive oil. Cook for 7-10min on low/med heat until onion is translucent.

    - Add the following to the above pot: 2 green apples (cut into 1/2" chunks), 5 cloves garlic (minced), oregano (a bit), 1/3C beer. Cook for 2-3min until fragrant.

    - Add 2C vegetable broth, cover and simmer on low/med heat (20-25min)

    - Puree with an immersion blender in short bursts

    - Add cooked potatoes, 2C white beans (though not traditional, I like to use garbanzo). Stir and serve over jalapeno cornbread.

    Bump.

    I'm in the Chile making groove this weekend. First up is Black Beans for BallersRide post apocalyptic lunches....to go into the freezer. For the massive crew I will have to make about 20 lbs of dried black beans!!! I can cook 15 lbs at a time on the stove...need a new kitchen yo. I've given the recipe before so no need to repeat.

    The point of this re-has is this: at Ballers I'm serving Chile Saturday night with red beans on the side, cornbread and green salad. There will be a veg. option. Hit me with your best, latest proven crowd winner recipe.

    josh..,

    --- got'a have red bean side and spiced just right.., iron skillet maze bread with craft brew --- then, down for the count..
    ingredients.., time in action & handling.., along with freight pd by ronnie if any right-overs left & sent..
