They seem to stay juicier and no worries about burning. If folks want cheese, I keep them covered as well...about 450-500F.
I really like doing them smashburger style on the cast iron griddle - you get a great sear on the exterior that locks in juice and flavor, and, it keeps them from shrinking in diameter while growing in thickness like they typically do. The key is to not cook 'em too long, I'd still like a little pink in the middle. I need to start timing them... Once they're done I move them over to the side of the grill opposite the fire (coals are in a basket under the griddle). Add cheese and close the lid, give 'em just a minute or so, and the cheese is melted and ready to go.

Smoked half a rack of pork ribs and spun a chicken on the rotisserie. 2nd chicken on the rotisserie, best one yet! Drip pan below the bird, coals banked on either side seems to be the way to go.

Checking all the boxes - post-double-century-refuel, vegan, paleo/grain-free ('cause we had visitors) and gobbling up some excess apricots

Apricot upside-down cake - laying the foundation

and the finished product (then we hit it with a torch to get it all caramelized, but it was eaten too quickly to take any pictures after that..)

My SO picked the strawberries and baked the shortbread. I manually whipped the cream.

The kids are all away and it's just me and Mrs. RW at home for the holiday. Burgers, chicken, salad, fruit and Proseco for two. Happy 4th out there!

    Hi Mike,

No unfortunately not wild, those are truly amazing. But these are a different variety than most other commercial pick your own places or market stock. Not quite wild but much closer than most. They are still really special...

I had to do it. For science. There were no more strawberries. The peach wasn't local. But there was leftover shortbread, and some cream. It was for science. Really.

Strawberries last night were better. But I reserve final judgement till the local peaches are in... 3 more weeks...

That peach dessert looks divine. For an experiment, whip the cream with some Bailey's Irish, or pour it over the shortbread. Or just drink it. Or send it to me. ;)

I made Pofesen, basically a battered and deep fried (and hence, amazing) jam sandwich eaten hot.

    1) thin slices of day old bread, in this case with homemade cherry jam, dipped in thick crepe batter:

    2) deep fry:

    3) cinnamon sugar:

[QUOTE=Octave;840786]Sunday supper - mirepoix, deglaze with white wine, top up with broth and throw in some homemade cavatelli. Finish with some arugula flowers and call it dinner.

Just reacting to this. Yesh, you lucky man. Arugala flowers!!! Brilliant.

Just out of the oven. Organic (everything) cornbread. Just good old rough grind cornmeal and what have you to go with a pot of lentils. Also, this weeks coffee bean roast. Kudos to @jimmbagadoughnuts for his insights. The VSalon Coffee Exchange is alive and well behind closed doors. Take the deep dive, get cracking >>> https://www.velocipedesalon.com/forum/f60/

The weather broke and being such a nice night and having come fresh from the farmer's market, the call for the grille went out. Mediterranean grilled chicken with orzo, roasted tomatoes, garden salad, local corn and grilled lavash all washed down with a chilled Rose from Provence.

Another pork tenderloin on the kettle rotisserie. Didn't over cook it this time! Super easy, and quick too, only about half an hour of cook time. Really tasty.

Friends are coming for dinner. I'm making both chicken and prime sirloin tip kebobs so I had to make some Jalapeno Pickles to go with.
