    Sunday's dinner was awesome. Beef chuck ribs, broccoli slaw, and sweet potatoes.

    I rubbed the ribs with Meat Church's 'Holy Cow' rub, smoked them with cherry wood for 6.5hrs at 250*F. I smoke the rack intact, and then cut each bone off, and cut the meat off the top of the bone. Then slice that at a 45ish degree angle so you're cutting square across the grain, and you basically get little mini-brisket slices. So good, and makes a lot more sense to cook than a full brisket for just me and my wife. Left overs are chopped up and frozen and will be used in tacos later. For just the two of us we can get two night's dinner off a rack.

    The rub isn't super coarse, so they didn't get quite as much bark as normal, but they were still really good.

    I finally gave in to the Instant Pot wave as a way to do fast protein other than grill for weeknights. First couple of attempts were ok but nothing special. Tonite I hit it more solidly.



    Chicken and Sausage Gumbo.
    Skinless boneless chicken thighs, cut each in half
    4 Andouille sausages, sliced
    1 package of frozen okra
    Home gown red peppers and onions
    1 cup of water and two teaspoons of cornstarch (not very keto but it is what I had for thickeners...) stirred smooth
    A shot of gravy master for color.
    2 heaping teaspoons of Chile Garlic paste
    Liberal squirts of Worcester sauce
    Thyme, salt and pepper
    25 minutes cutting, throw it all in the inner pot, stir, 30 minutes under pressure (walk away, it's happy on its own)

    New record for taste/prep time ratio...

    Possible to do in a enamel slow cooker in the oven if so how would I adjust cooking times.

    That is a proper pumpkin pie. My fondest memories, dont worry it is bike related, are riding from home to visit my now very senior Swiss nursery school. The couple who ran the place were delightful. They fed me and sent me home with pumpkins to make into pies. Mom made the pies but it felt like a first step.

    Sooooo. We are Glamping at Hatteras and just cranked out one of the best meals of my life. Maybe it was the Bulleit Rye or cooking over charcoal or the salt air?. The combinations were simple and supreme.

    Carmelize sweet onions
    Over hot hot hot coals quick cook shrimp ( evo salt pepper )

    Serve over black beans and rice with more black beans on the side and hot sauce of course.

    Well, what do you do every year after "gutting and defacing" your pumpkins? Why you make pumpkin seeds of course. Butter, salt and 45 minutes in the oven at 300F.

    It's Fall in Western PA so it must be venison season...smoked venison sticks prepared and shared by one of our electricians at a project site this morning. I took a pic before they disappeared.

    Many of the guys on the job site have “hunting camps” in Georgia. They offer all kinds of venison to me that I politely decline. I have never developed a taste for it. They always come back with “This is different.” Not so much.

    Mike...I’m sure you’ve been there many times...we were having a “come to Jesus” meeting with my PM, super and a sub and I ate the venison as a symbolic gesture...an edible peace pipe if you will, after all was sorted out. Every once in a while you need to let the field staff know that the “suits” are on the same team as they are.

    Not so much cooking but fermenting: bottled some lacto-fermented red habanero hot sauce and am making sauerkraut today (hence the horseradish).

    The horseradish in the pic is part of the sauerkraut recipe (along with salt, bay leaf, Juniper berries, and dill).

    I'm from not too far from Regensburg. I have consumed horseradish only with relatively mild sausages (Frankfurter, Weisse). In those instances it's been a dollop of (hopefully freshly grated) horseradish next to a dollop of mustard.

    I do have some of the stuff in a tube and just took a look: ingredients are horseradish, safflower oil, white vinegar, sugar, salt. That sounds about right to me. Martha Stewart is a good go-to for the classics and her recipe is largely the same though omits the oil (I'd add it back in as it will make things more smooth):

    Seemed like a fine day to fire up the oven. Gorgonzola and goat cheese with onion, basil, pears, arugula and a few walnuts.

    tuesday = dumpling class at cooks warehouse. learned how tos for filling, dough, wrapping, and cooking. thursday = at home trial. it went extremely well. ate most of them boiled and then turned a few into pot stickers. need to find the steamer baskets for next time.

    this was the first test batch. new skillet performed perfectly.
