I used to be able to get the greatest anchovies, branded PIC. They came in a glass jar with a glass bail topped lid. They were packed water based with some onions and herb and probably some capers, with a bit of oil on top.
They tasted so much better than any other anchovies I've been able to find since.
Most I can find now are oil packed.
The PICs were fresher tasting and much more interesting and complex.
The difference with what I find available now is something along the line of the difference between tomato paste compared to a fresh wonderful perfectly ripe garden tomato.
They were so good, I used to boil pasta and just add some of these anchovies, a bit of garlic and some olive oil.

Now, I can't find them anywhere, even with help of the internet.
Has anyone found a great anchovy that could replace the no longer available PICs?
