I usually do this when I wake up. Don't race until afternoon for most crits or cross races. Never been a problem for me.

I'm always either doing some eggs/greens/sweet potatoes, or just oatmeal plus molasses and various fruit/nut toppings. Definitely a big fan of the juice game, especially beet (don't mix it with the beet greens), apple and carrot.
Coffee is a must. Lots and lots and lots of coffee. Probably an unhealthy amount.
All the go-tos aside, the best I've ever felt in a race was when I ate this glorious sandwich before it:
Sprouted Wheat Bread
Peanut butter
Smashed up avocado
sriracha sauce, but not too much
1 fried egg.
Hate on it, but it was really, really good.
