Mid-Summer day of the Ox is July 22 this year and Unagi-Donburi is the best. (Although a shortage of Eel is causing prices to rise)
I know a great old shop specializing in Unagi near Bank Of Japan in Nihonbashi. You can take your wife to Nihonbashi Mitsukoshi department store and visit the upper floors. They usually have traditional Japanese arts and crafts on display. They also have some really pricey taditional tea bowls.

I second the trip to hakone ... A totally different experience than Tokyo. The hot springs are awesome ...as is the view of Fuji-san

There's a lot of down time when people are betting, bring a book. I wasn't too interested in betting. The racing was fun to watch even without a financial investment. Lots of flashing lights and heavy metal music when the gladiators step out into the ring, exciting stuff. Also, it's probably the only place in Tokyo that you'll see people littering.
Also, +1 to the unagi suggestion.
Got back home today. Slept most of the afternoon. Mad props to vertical Doug for the tips, not a bad one there.
