    Default Oatmeal Pancakes

    There is a lot of cheffing wisdom in this room but I thought I'd share one of my favorite weekend recipes. These pancakes cook like regular pancakes but they have a nice subtle, hearty flavor. They go well with syrup and eggs-n-sides and they speak for themselves with and touch of butter and sugar. I pulled the recipe from here.

    Oatmeal Pancakes

    Makes about 18 pancakes

    3/4 cup oat flour (you can make this by pulsing rolled oats into a food processor or spice grinder until finely ground; 1 cup of oats yielded 3/4 cup oat flour for me)
    1 cup all-purpose flour
    2 tablespoons sugar
    2 teaspoon baking powder
    3/4 teaspoon Kosher or coarse salt
    3 tablespoons unsalted butter, melted and cooled slightly (plus extra for the pan)
    1 1/4 cups whole milk
    1 cup cooked oatmeal
    1 tablespoon unsulphured (not blackstrap) molasses or 1 tablespoon honey
    2 large eggs

    Whisk the dry ingredients (oat flour, flour, sugar, baking powder and salt) together in a large bowl. In a smaller bowl, whisk the butter, milk, cooked oatmeal, honey and eggs together until thoroughly combined. Gently fold the wet ingredients into the dry ingredients. Cook like regular pancakes...

    Hell yeah. I make oatmeal pancakes about 3x per week. My kids love them and they work well as bike food too.

    My "recipe" is quite different though. My pancakes are super-hearty. (Quantities approximate, I make them entirely on muscle memory at this point.)

    1.5 cups flour
    1 cup raw oats
    1 tbsp brown sugar
    1/2 tbsp baking powder
    1 tsp salt
    dash of cinnamon

    Mix that stuff all up in a bowl.

    4 eggs, preferably at room temperature
    1/2 cup greek yogurt (the secret ingredient in almost everything I cook)
    1/2 cup milk
    3 tbsp cooking oil

    Mix that stuff up in a bowl, just enough so the eggs are mixed in. Combine the two bowls, then add however much water you need to make it the consistency of pancake batter. (How's that for a classic Dad recipe.)

    Cook in a hot buttered skillet. Serve with blueberries, bananas, more greek yogurt, and maple syrup. Unless using as bike food, in which case just stick em in the fridge.

    We get 5 lb bags of "organic regular rolled oats" at the health food store. I use them (raw) in homemade bread too, and my wife makes granola. We go through about a bag a week. Maybe we will turn into (organic) horses.
