So as I was stepping off the rollers this evening, my wife was holding up the menu to the local chinese take out.

Without hesitation I place my order of house special chow mein and I split an order of egg foo yung with her.

This got me thinking that one of my goals for last year was to learn to make a good egg foo yung at home.

I tried several from the internets but wasn't happy with any of them and my enthusiasim petered out. Not too concerned with the gravy part of it but I know someone here is acrack hand at whipping this up.
