    Default Kim Chee

    I had to go over to Maui for work yesterday. Caught this article in the inflight mag, which on Hawaiian air is usually pretty interesting. I love Kim Chee - think of it as a condiment that you can use with other stuff, like sauerkraut, but hot.

    Love me some Kimchi. I've made it myself once. Up her in Vermont you can get it at one of the asian markets in burlington or Flack Family Farm makes some really really good Kimchi. It's not a traditional recipe, there is no shoyu, but it's damn good. Napa cabbage, shitloads of garlic, dried hot pepper, rice wine vinegar, sugar.Look to the Momofuku cookbook for lots of inventive ways to use kimchi as well as a recipe for it.

    I spent a year stationed in Korea, they ate it with everything. Every meal. Even had it in the mess hall because many of our cooks and support personnel were local Koreans. Bleeeecchh!

    I can easily eat my weight in the stuff. I prefer the fresh varieties to the fermented kind, there's a fine line between fermented and rotten.

    Theres a cucumber style that stuffs whole cukes with shredded carrots, radish and spices that I hoard when its available.

    Crispy fried beef in a light barbeque sauce glaze on soft corn tortillas with a nice pile of chopped Kim Chee make for a quiet dinner table.

    Yum yum....count me in. We have a great food truck here (Koi Fusion) that serves a killer Kim Chee quesadilla.

    The hotter the better.

    3 eggs + leftover rice + kimchi = a pretty good omelet. Gotta try the sandwich, are ciabatta rolls ok instead of white bread?

    As far as I'm concerned, make it with what you have. If it is good, go with it, if it isn't don't go there again.

    Just kidding. But thanks for posting the article, it inspired me to try a ham & egg & cheese (yes, on a ciabatta) with kimchi this morning instead of hot sauce or shichimi. That worked out well.
