Kris, how thick is the thinnest part of the dimple? I really like the style of these dimples.

The thinnest part of the dimple is .5" (the tube starts at .75" O.D.)

I assume you are still using this setup with different size dies and backing plates, if so what size dimple die you did use for the above dimple?

That is correct. The dimple die is quite larger for this one and I believe it's 5" diameter (2.5" radius). Here's a picture of that dimple die (which I have begun to prefer for all builds-the overall transitions are much smoother from dimple to tube):
