Default frames with front centres over 60cm

is it common to go bigger than 60cm on larger frame sizes or just modify with fork offset/rake?

I don't know if it's common but I go bigger than 60cm front centers on larger frames.

If you mean longer, not bigger, sure.
60cm is no magic cutoff number atmo.

Anyway - whatever the number is makes no matter outside of the stew of dimensions that comprise the complete design atmo. And then those also will work in harmony with the rider contact points which is another set of specs altogether atmo.
