    Default Vegemite, marmite, yeast spread

    Does somebody here would have a homemade reciepe for vegemite/marmite/yeast spread?

    When my dad came back from the Sydney olympics he brought back a few cups of it and now I would like to have some but it's not something you can find in Quebec.

    Google didn't help me much.

    no recipe, but with dad being a kiwi, I was kinda brought up on the stuff. I know you can find marmite in grocery stores in the jams/spreads aisle in ottawa, so maybe you might find it where you are as well?

    i'm more of a vegemite guy myself and have ordered it in the squeeze tube from here in the past:

    This give me fond memories. During Race Across America some yrs. back the woman I was supporting during the race asked for Marmite on wheat bread every few hrs. It smelled awful but I finally tried it and yeah, it's pretty darn ok.

    I'd think that making this is not easy.

    Here's my recipe:

    Marmite = Salt + grease + dirty socks (equal parts). Blend.

    Seriously though, it is relatively common in the larger Ontario grocery stores but is often hidden in the baking section. If you come to Ottawa, if you attended the GranFondo Ottawa for example (http://www.granfondoottawa.org/), the No Frills stock it. In Quebec, I have seen it in Montreal at La Vielle Europe, a deli a block or so south of Schwartz's on St. Laurent.

    I don't think its a simple process:

    From here Australian food - breaking the rules of fine dining

    "Spent brewer's yeast is sieved to get rid of hop resins, and washed to remove bitter tastes. Then it is suspended in water at a temperature greater than 37 C with no nutrients: the yeast cells die, and vitamins and minerals leach out. Then the proteolytic (protein-splitting) enzymes take over, breaking the yeast proteins down into smaller water-soluble fragments, which also leach out. The yeast cell membrane is unruptured during this time, and can be removed by centrifuging. The clear light brown liquid is then concentrated under a vacuum to a thick paste (the vacuum helps preserve flavours and vitamin B1, thiamine). It is seasoned with salt, and a small proportion of celery and onion extracts to increase the palatability."
