killed it this weekend with a bolognese lasagna. 3 hours of reducing with beef stock, wine and milk. Everything was organic less the wine and all the veggies were picked within 2 days of purchase. Real mozzarella and the good stuff. Plus I had two of the best helpers in the world assisting........ plus garlics are emerging in the garden.

    The season continues to provide...

    Out riding on Sunday

    Vin.jpg

    Stumbled upon these

    Sauvage.jpg

oh, and these beautiful 'trompette de la morte'

    Trompet de la morte.jpg

carefully filled some gillet pockets still some 60km from home, and through the grace of riding unzipped and remember not to shove anything into the same pockets, they made it home and onto the cutting board

where they found their way into being combined with my other food obsession, pasta. Ravioli del plin, filled with mixed wild mushrooms and cooked in homemade broth. Voila.

Bacon wrapped pork tenderloin medallions. Got 8 medallions out of the tenderloin, so we used a few different seasoning methods, made two of each. They were all lightly brushed with olive oil before adding the seasoning/rubs.

    Salt and pepper
    Butt Rub
    Peach Bourbon Rub
Mama Honey's Hiney Rub (this one is made here in Macon, and it's pretty spicy so I didn't use a lot, but it was my favorite of the bunch)

Charred some poblanos, anaheims and tomatillos on the grille. Garlic, cilantro, green onion and a pinch of cumin. Used most as a soup/chile verde base but saved some off to side for dipping. I won last week's office cookoff with this recipe, and just got terminated today after 20 years. Yes, it's THAT GOOD.

Alright, last one I promise (not really up to me, since the season is largely over now...) - rainy saturday, 185km ride on Sunday equipped with the backpack my wife made me for riding up/over to Italy. It rolled up perfectly into a back jersey pocket, then came out around 90km into the ride, and by 150km it was completely full of mushrooms and cactus fruit. Here are some of the spoils, ready for a risotto (if there was ever a more unphotogenic food, I have not found it).

    Mushrooms!.jpg

Not pictured: 15 cactus fruit that are currently being gelled into gummies, making the full circle all the way back into my jersey pockets..

We had some long time friends over for dinner this evening and Mrs. RW was in a Mediterranean cooking mood. Breaded and roasted shrimp with feta cheese over basmati rice, accompanied with naan and a cucumber salad. Paired with some really tart Gewurztaminer and an added bonus of caramel/sea salt crusted dark chocolate brownies. The espresso machine was working overtime to keep up with the brownie consumption.

Simple but surprisingly delicious. Also a 100% local salad (radish, fennel, sweet pepper, arugula, asian pear) and some excellent New Belgium La Folie.

    That's good looking Zahhhh.

Dilema. A heavy frost last evening ended my Jalapeno plants. I've harvested another 6 lbs of peppers. Should I make more dill pickle garlic jalapeno rings or ? I'm thinking salsa. Open for suggestions.

you could use up a lb (or more if you want)

give the jalapenos a good roast under yr broiler
a clove of garlic, maybe a quarter onion
then destem and deseed the jalapenos, the skins on are fine
    teaspoon or so of salt
throw it all in yr vitamix and emulsify with vegetable oil, perhaps drop a bit of sour cream in there

enjoy with tacos or just chips or enchiladas or ...??

Caramelized onions, prosciutto, steamed broccoli and firm mozarella. Whole wheat crust.
