The wheel is round. The hill lasts as long as it lasts. That's a fact. Everything else is pure theory.
Our local haute cusine house has been improvising as all restaurants have and did a special take out meal for Bourdain's birthday, focusing on Vietnamese Bun Cha... immortalized in his dinner with President Obama.
We splurged on this take out meal last night and I am still in awe of what they put together. Sweet, sour, soft noodles and crunchy veggies, spice and light umami/star anise/dashi-laden broth. A significant part of the proceeds were donated to a local mental health support charity. All together a fitting meal, honoring an amazing man and for a cause that will provide others the support he felt he never received.

We went to Les Halles one night and Anthony and Carlos Garcia were cooking in the kitchen.
They are both gone now. We used to see Carlos taking his break in Koreatown on 32nd street.
Anthony pretty much determined our vacation schedule for many years.
No one to replace him sadly. We had a Vermouth in his memory today.
Les Halles is where I had my first blood sausage. The waiter assured me it was kosher. Damn fine and fun restaurant.
