It’s been five years since I started this thread and I still haven’t replaced my steak knives!
But then again my wife is still putting them in the dishwasher.
Steak Knives are fuckign 2nd place !!!

I have some Goko petty knives that work great as steak knives. Not cheap, but they have a great feel.
Definitely not dishwasher safe.
I picked up a set of Opinel 125s. For the price they can't be beat - $50 for 4 and they come in a variety of colors or natural wood scales. So far so good.

i found some cheapish petty knives from ebay that work great as steak knives, 120mm, nice shape, stay reasonably sharp.
i have a nice vg10 petty knife that is 150mm that i sometimes use as a steak knife, that one is great for breaking down a chicken.
i sharpen all these things with wetstones...
I ended up with the modestly priced Victorinox. After subjecting my family to all sorts of advanced interrogation techniques, I was convinced they'd just put any new knives in the dishwasher; so no point buying top of the line blades. I have to say they are pretty darn nice. Sharp enough that if you're not paying attention while washing them you can slice right through the tip of your finger.
Ask me how I know.
