In the Instant Pot
Saute High setting
Olive oil
Country style pork, browned on all sides in batches, remove.
Sweet Red Pepper sliced coarsely, add to pot stir occasionally till they start to soften
Large white onion sliced coarsely, add to peppers, continue stirring.
Return the pork to the pot stir well
1/2 jar of kimchi (i used Moma O's Super spicy)
1 cup chicken stock, stir
Turn to manual for 35 minutes. Release pressure. Serve. Rice traditional but optional... Garnish with fresh chopped cilantro.

Thanks @guido that is a neat recipe.
Last night, poor me, all I had on hand was a box of Orzo, some wilted Kale, dried up cheese and some fabulous olive oil.
While I wait for @hampco to deliver a case of Olive oil, still waiting brah, I was gifted Oilve oil from Seasons. Normally I would not give that a second look. D@@@@mn it is good stuff.
Cheesey glutinous goodness with a tiny amount of nutrition just because.

Pretty simple dish last night...sautéed chicken, carrots, celery and onions cooked with potatoes and chickpeas in Trader Joe's Thai curry sauce over Jasmine rice. An ice cold Rebel IPA, warm naan and a fire while watching a few episodes of Endeavor...ready for the new week. Sorry about the dark pic.

When, by necessity, one lives in multiple cities one often finds that there are no necessities in the cupboard when you get to the place you were not last in.
Thankfully, I found a 2 pound lobster tail buried in the freezer (left over from a delivery that had included the most fabulous smoked salmon belly jerky from Pure Food in Pike's Market, Seattle).
Some canned San Marzano tomatoes, garlic, a bit of arborio rice found under some old cracker boxes, and some bouillon and packaged parsley...

I took a swing at instant pot shrimp and andouille sausage. Lots of fussy tastes and textures to balance. Oh well, edible but not outstanding and learned a bit for next time...

Nice work. When I was regularly going back and forth between Minneapolis and New York refrigerator was always a pain. No matter how hard I tried not to end up throwing food out, I'd always need to chuck some fresh stuff before leaving, then promptly go grocery shopping for the stuff I previously threw out on return.
Clearly the solution would have been to just live on two pound frozen lobster tails.

12 eggs, slivered onions, red peppers, blanched and chopped chard, reconstituted dried local mushrooms, homegrown fingerling potatoes, homegrown garlic, a healthy grind of parm, thyme, lavinder, rosemary, salt and pepper.
Finished in the oven...

Jon, that tugs a sentimental string. Finding a decent meal while looking at a wasteland is an art. Nice work.
One of my go to meals if we are positively out of everything is sardines melted into olive oil and slivers of garlic if I have them and maybe some dead cheese. Toss some al dente pasta into the pan and it's dinner.

Sous vide pork tenderloin, 135*F for ~1.75hrs. Seared in a pan on the stove....I usually go out to the grill to sear, but it was tornadoing outside, so, we stayed in last night. Sous vide is GREAT for pork tenderloin. It's sooooo tender, and no worries with over cooking it. You don't get the smoke flavor like you do when cooking on a charcoal grill, but it's way more convenient, and the result is more tender.

Thanks for asking Mike. Luckily the tornadoes went south of us, all we got was a LOT of rain and some wind. The south side of town had 3" diameter hail in places!!! Middle GA wasn't hit nearly as hard as Alabama, it's awful over there.

Nothing like fish tacos on a Friday night...not on the grill because it's snowing right now, but broiled in the oven and topped with a little cheese, lettuce, yogurt based sauce, lime juice and a dash of tabasco. Settling in by the fireplace now.

We had some friends over for dinner last evening and my alchemist wife decided to experiment with some brisket. The "difficult" part was having to smell the brisket cooking for 4+ hours or so...

My French Canadian sister-in-law had a request for Easter dinner. I am not sure if my forebears are plotzing that there is a wife who does Easter dinner or that her sister requested BBQ ribs (and chicken) on this weekend.
Smoked over indirect heat in two Weber kettle grills with maple hardwood charcoal and applewood chips. Topped with a Texas BBQ sauce recipe from my college roommate’s grandfather.

Six people went through 3 whole racks and almost 2 whole chickens. There was a chicken quarter and some sides (which Mrs Waterdog created)leftover.

it is asparagus season. I have some. Planning a couple of non meat days. Got some eggs and rice, plus some green beans, onion. Loads of herbs and spices in the cupboard. Also Mayo butter garlic etc. I know this thread is about saying what you are doing, but I was wondering if anyone has a whiff of inspiration about what might be done. Couple of guests coming so want to make an effort. I have enjoyed reading this thread. Been riding in the rain. regards
