Saltimbocca alla Romano...chicken wrapped with prosciutto, sautéed in butter and white wine with pasta tagliatelle. Homemade bread of course all paired with a Charles Smith Red from Washington state...a little freshly shaved pecorino cheese on the pasta.

Did the Milk Street spiced pork tenderloin again this weekend. It's so good, and easy to make. I've found my favorite way to make potatoes too - olive oil and Dizzy Pig's "Raging River" applied liberally. So good.

my plan, because I have a few friends coming out to Austria from London (coronovirus permitting, scary btw) is to defrost the neck of pork I had forgotten about which I got from the bloke who supplies the local restaurants. Once I did it and it came out really well, the other time I think I mucked it up. The idea is to put the meat in a marinade made of various oils, garlic, spices and herbs, leave it, then roast it very slowly. On the side will be some mashed potato with onion and too much butter and a bit of salad for the heart.

Picked up some really good looking ox tails at a country butcher shop yesterday. Nice and meaty and from happy grass fed cows. Gonna try some braised caribbean oxtails w broad beans. I will let you know how they turned out.

Ox tails and broad beans w/taters n carrots in a spiced gravy. Turned out wonderful. Very tasty and the flavors of the homemade carribern curry was not overbearing. Had a big bowl over short grain brown rice and a thick slab of sourdough bread.
Definitely not for ppl that dont like to eat w/ your hands as the tail meat needs to be sucked off the bone to get all the meat and wonderful flavors . I will be sopping up the gravy with some more of that sourdough bread

Gearing up for tomorrow’s celebration but alas, many family members will need to join virtually. Sent a goodie package to our daughter and both grandmas will have a special delivery from the masked Easter Bunny himself.

Can’t get over the border to the Lake, mother-in-law quarantined in a senior home in Ottawa; so decided to do something for the French Canadian wife as she was missing her holiday traditions.

My Lao friend who used to own a restaraunt made his own pixie dust with a blend of peppers this is similar in heat but not quite the same flavor. My friend at the Vietnamese grocery store/restaraunt told me to remember you can always add more but you can't take it back. Deb and I have very different heat tolerances and her's are pretty good. I like it when my head sweats, so I always add a little extra after i've plated her's. I use it in a other things as well but it will liven up a Papaya salad in a hurry.

For Frank. Get your mitts on some texas chiltepin dried peppers. Grind them in a mortar and go nuts. These have intense heat and peppery flavor so it is not just heat. Also, wah wah, are the only peppers I serve to my Mumbai neighbors which they declare properly hot!

Thanks Brother, adding pictures adds a new dimension to the conversation. My Asian friends stopped trying to explain why I eat the food I do, Eng had 4 levels of heat at his restaurant, mild, medium, hot, and Frank's. A friend stopped there once and asked for it to be Frank hot..No, Franks not here, medium is fine for you. It was almost more than he could handle. Looking forward to contributing more to the conversations here.

Frank I used to grow Jalapenos every year. The last year I grew them there was this one plant that was a freak. Normally I'd share have the bounty with my Mumbai neighbors. We would munch on them like cucumbers but this ONE freak plant was too hot for any of us. Wish you were here.

I wish I had a picture of the dish Eng would make for me. It's a Lao/Thai Street dish of sliced raw shrimp "cooked" in a mix of Lime Juice and Fish Sauce topped with Holy Basil and a ton of sliced Birds Eye peppers with a side of sticky Rice. So, so good, my lips would go numb. I was at one of the family parties at the Restaurant, and he brought out several plates of it. I couldn't keep up with the conversation when he gave me a plate but Eng just started laughing and told me that the Aunt's and Uncles had never seen a white man eat that. His Mom sat with Deb one night and described how she and husband brought 6 little kids out of the country, they were in the first wave of Boat people.
