To all those interested in the pigs head.
I'm in the middle of working 8 days in a row right now. The Head is in the freezer. It'll be a week or so. Sorry to tease you like that. I thought I was gonna be able to cook it shortly after I got it. (For the record it came fresh (not frozen), which blew my mind. I really didn't want to freeze it, but work is extremely busy this month.) I promise there will be a full blog post and a thread about all the lovely things you can do to turn a pigs head into a delicious meal for you and your friends.
My Plan is to rub it down with salt, sugar, and black pepper. Roast at 225 for 8 hours. Put it in the middle of the table and give guests access to fresh tortilla's, limes, and plenty of salsas. Pigs head tacos.
