I'm blessed, whomever lived here before me was big on fruit trees and I'm loaded; peach, apple, orange, mandarin, two different plum, cherry, persimmon and avocado.
Right now the last of the Elephant Heart plums are ready and the persimmons are just starting to ripen. If you've never had Elephant Heart plums they are well worth searching for, they're excellent....much better than regular plums IMO.

We tried the caramels (followed a recipe for apple cider vinegar caramels, using fresh pomegranate juice in place) and they didn't work particularly well. In the end we have been using it as a topping for chia pudding, as it never really set up. The recipe had us reduce the juice to about 1/4 the original volume so it was quite concentrated, then add the rest of the ingredients and bring it up to temp. Everything looked great but it never quite set to a good caramel texture. I wonder if it's a pectin thing (natural apple juice has a good quantity of pectin in it, pomegranate does not).

Pectin maybe, I think more sugar unfortunately.
