Christmas pudding with whisky
Last year Perry bought some Glenfiddich Christmas puddings, which went down extremely well.
Of course this year we can’t find them, so I’m having a go at doing my own.
I’m basing it on the Maggie Fulton recipe, but substituting whisky for rum and messing with other stuff because I like to.
So,
60g sultanas, 60g chopped raisins, 60g currants, 20g chopped candied peel, 20g chopped dried apricots, 1/2tbsp lemon zest, 1/2tbsp orange zest.
I mixed this together with 80ml of Glenmorangie, and I reckon I’ll leave it be for a couple if days before continuing.
I’m doing about 3 times the booze that Maggie calls for. Even then it feels like it could sustain more.
